Im making a Very Conscious effort in my life right now to incorporate more raw vegetables. If I don't plan ahead I always default to snacking on Nuts or Fruits, Or Crackers of Some Sort. Then dinner comes around and Im trying to cram in as much healthy stuff as possible. I decided to make some things I can keep in my fridge that I can grab when I'm hungry to start getting in a habit of eating veggies ALL DAY. This slaw is one of my favorite new options!  I am not on a fully raw diet. I LOVE roasting my veggies. But, I do realize that when you cook your veggies you change the chemistry of the food and lose a lot of enzymes and nutrients. Incorporating Raw Vegetables into your diet can help your body digest food more properly, it can fight inflammation, and also help with chronic disease. Finding some delicious Raw Recipes is DEFINITELY WORTH EXPLORING.
