Healthy Gluten & Grain Free Blueberry Muffins: Deliciously Fluffy & UNPROCESSED


Healthy Gluten Free Muffins For KIDS:  I literally crave blueberry muffins but I can never get myself to buy them at the store  because of all the processed sugar and additives. I mean if you read the back label of the next blueberry muffin box you pick up you will be shocked. I know I was. I feel like my kids may as well eat a donut before I buy those. We do love donuts. However your blueberry muffin love affair can still go on with this new recipe I guess I sort of made up adapting a Raspberry Muffin recipe from Danielle Walker's cookbook.


 This Grain Free, Gluten Free, Perfectly Unprocessed Fluffy Muffin Recipe is worth every ingredient. Just measure everything out first and let your kids throw it all in the mixing bowl. You will absolutely want to double or triple this healthy recipe because they will go like lightening! I always know its a good one when my husband is ripping stuff out of my hands. My favorite part about these muffins is that they are void of all processed sugar and sweetened with Honey. Have I convinced you yet? Whether you are a baker or not, you cant mess them up.

I Shop online for almost ALL my baking flours because Amazon rocks my world and I can only handle the in and out with two kids so much. Anyways I love you all. 2 eggs room temp :
1/4 cup coconut water:
 2 teaspoon apple cider vinegar:
2.5 cups blanched almond flour :
1/2 cup local honey:
1/2 cup palm shortening :
2 tbs coconut:
1 tablespoon coconut flour:
1/2 teaspoon nutmeg :
3/4 teaspoon baking soda :
pinch of salt
2 teaspoon pure vanilla extract :
1 cup blueberries raspberries mixed 

Silicone Muffin Pan:
Mixer :


Preheat your oven to 350 degrees and lightly grease a silicone muffin pan. Yes silicone makes life easier. 

Pour all ingredients except for the blueberries into the mixing bowl in the order listed above . 

MIX until smooth. 

Add blueberries and mix lightly with spoon

Pour into trey and bake until golden brown. about 20 min. 

Let cool, add some butter and ENJOY  Full of Protein and love, these muffins are a kids breakfast you can feel BERRY good about.
